Tomato Pudding
A co-worker set me this recipe he had seen on YouTube, supposedly over 200 years old. Josh & Momma, what a fun video to watch. According to Josh it’s the new monkey bread! May be a good way to use extra tomatoes from garden? I can’t resist making it now and bringing it in to work! I’ll let you know next week what we think.
1/2 loaf white bread (10-12 Slices)
1 1/2 stick butter
1 15 oz can crushed tomatoes
1 cup white sugar
1 cup light brown sugar (dark if you want a more molasses taste.)
2 tsp. cinnamon is what recipe called for, (more or less, she used 2 Tbsp.)
2 tsp. vanilla
Remove crust from bread and cube, put in pan.
Melt one stick of butter and pour over top of bread cubes, lightly mix.
Mix together crushed tomatoes, sugars, cinnamon and vanilla.
Pour over cubed bread.
Cut 1/2 stick into 6 butter pats lay on top of tomato mixture.
Bake 375 for 45 minutes.
