Pumpkin Apple Crisp

Ingredients
Filling:
3 cups peeled, sliced apples (Honeycrisp or Granny Smith)
1 cup pumpkin puree (not pie filling)
¼ cup brown sugar
2 Tbsp white sugar
1 tsp cinnamon
½ tsp nutmeg
½ tsp vanilla extract
Pinch of salt
Crisp Topping:
¾ cup old-fashioned oats
½ cup all-purpose flour
½ cup brown sugar
½ tsp cinnamon
6 Tbsp cold butter, cut into cubes
Directions
Preheat oven to 350°F (175°C). Lightly butter or spray an 8×8 baking dish.
In a large bowl, mix apples, pumpkin puree, sugars, spices, vanilla, and salt. Spread evenly in the
baking dish.
In another bowl, combine oats, flour, brown sugar, and cinnamon. Cut in the butter with a fork or your
fingers until the mixture is crumbly.
Sprinkle the topping evenly over the apple-pumpkin mixture.
Bake for 35–40 minutes, until the top is golden and the filling is bubbling.
Serve warm with vanilla ice cream, whipped cream, or a drizzle of caramel.
