Have a corn-tastic day. Did you know?

Minnesota knows corn is more than just a side dish, which is maybe why we grow a lot of it — like 14.9 billion bushels of corn a year “a lot”. As a state, we produce everything from field corn (used to make ethanol, diapers, plastics, and more) to the beloved juicy, sweet corn. Sure, Iowa might talk a big corn game, but here in the Star of the North, we’ve got kernels of history, culture and creativity wrapped up in every ear.

From fried chicken to mac and cheese to meatloaf, there are plenty of dishes that fall under the country cooking umbrella. But a pot of chicken and dumplings may be one of the most popular and recognizable country cooking staples.

Cowboy Country

It was years ago when I was talking with, Larry Gunderson, a neighbor who was involved in rodeo at the time. I asked him how it was going. He said it was going well, which, from what I gather from rodeo folks, equates to “currently not in the hospital.” Larry then gave a painful account of all the bones, ligaments, and joints that had been broken, torn, or sprained due to his rodeo career. It was a spectacular list which suggests it takes a special breed of person to be in rodeo and I like to think I would have given it a go too. After all, I had cowboy boots, a cowboy shirt for the first day of school, and rodeo experience when I was just a little kid. What I didn’t have was a horse.

The economic impact of shopping within one’s community is significant. Though estimates vary and are always open to fluctuation, a recent survey from American Express and the National Federation of Independent Business indicated roughly 67 cents out of every dollar spent at a small business remains in the community.
