Auntie Vera’s Frozen Rhubarb Restorative
Rhubarb
P.Moraski/Tower
When I was growing up the The Tower News had Vera Million who wrote a column, and she was worth a million to be able to read. I wonder what ever became of the old girl? I was going through the family recipes and what did my eye fall upon nothing other than Auntie Vera’s Frozen Rhubarb Restorative recipe! A Little yellow but nicely preserved. I just have to share the recipe exactly as she wrote it in paper, there is nothing better than a small glass or two after mowing or gardening!
Auntie Vera’s Frozen Rhubarb Restorative
6 cups chopped raw rhubarb
1/2 cup water
1 – 1/2 cups sugar
1 2-liter bottle lemon-lime soda (all right- 7 up)
1 12 oz. can limeade or lemonade concentrate
1 to 1-1/2 to 2 to 2-1/2 cups white rum
Combine rhubarb and water, bring to a boil over medium heat until sugar is dissolved and rhubarb is soft. Let it come to room temperature. Combine remaining ingredients to rhubarb sauce and freeze. To serve, spoon into glasses and enjoy.
Time for my nap…
